Vinification: 10 days of grape drying on the vine (50% of the yield). Fermentation in barriques with 30% whole clusters, followed by malolactic fermentation and aging in barriques for 12 months, plus 12 months in the bottle.
Serving temperature: 12-16 °C (54-61 °F)
Recommended pairings: Cold appetizers, bacon, cheese, meat dishes (roast beef, rabbit, lamb), and fish dishes.
